Bin 707 is a perfect Cabernet Sauvignon representation of Penfolds House Style: intensely flavoured fruit, with the completion of fermentation and maturation in new oak. It expresses a Penfolds understanding of multi-vineyard, multi-region fruit sourcing. Like Grange, it is a blend of the best Cabernet fruit from the vintage. First vintaged in 1964, Bin 707 has long retained a secure place among the ranks of Australia’s finest Cabernets.
The 2023 vintage is a rich and commanding wine, its palate saturated with dark fruit flavours with notes of dark chocolate, spice and savoury depths. An expansive, full-bodied wine with proven transformation in the cellar.

"Impressive, exhibiting such length and exuberance. The highlight is a sweet core of dark cherry/chocolate. The colour is an opaque maroon while the nose opens with plums, chocolate (which never really abandons us), spices, bergamot, plenty of oak deftly handled, cassis, licorice, spices, nutmeg, cold tea, smoked meats, graphite and black cherries. Time in the glass saw the cassis/dark cherries/kirsch notes emerge more and more. There is refinement here, though it quickly morphs into a hedonistic energy, balance and focus, with fresh acidity running the length. This will easily sail through the next twenty to thirty years. 98 Points."
"A young and characteristic expression of cabernet bursting with crushed violets, freshly squeezed cassis, pencil shave, spearmint, and extra dark chocolate, coconut husk, all playing their keynotes in unison, like expert fingers on the piano. On one side, there is a level of exotic and floral allure; on the other, an Old World-like reminder of cooking herbs, garrigue, and rolled tobacco leaf. Yet unashamedly Australian all the way through. "Following the stellar 2021 and 2022 in Coonawarra, there is in fact no Coonawarra cabernet that achieved the 707 standard in 2023 (and no Bin 169 released), with McLaren Vale, Padthaway and the Barossa Valley stepping forward. The blend is instead led by McLaren Vale, where a wet spring, warm and dry summer and cool harvest contrasted a challenging, wet and stormy season in the Barossa. The result is a Bin 707 of characteristic power and muscle, set to a quintessential Penfolds tannin frame and strong American oak support. A core of classic blackcurrant fruit definition is accented with cedar and tobacco leaf and energised by vibrant acid focus and a spectacular cascade of powerful tannins that will hold it sure for half a century. Scents of black olive tapenade and tobacco pouch may assist in the varietal ID. At first, scents ascend of Copha/dusty chocolate and barrel-ferment pralines. Ditto, dry-aged beef and pan juices. Soaked dark cherry/fruit cake mix/rhubarb/Black Forest cake attest to variety. Peripheral freshly ground cinnamon notes add further complexity. And again, not to forget – we’re engaging Penfolds ‘Grange of Cabernet’… almost identical winemaking and 100% Quercus alba. Many confer – different variety, similar style.
A first impression reveals that this release is not overtly fruit-dependent, although blackberry and mulberry fruits are instantly detected. Perhaps more of a savoury/earthy disposition, augmented by pan juices/jus and black olive, and laced with exotic spices; turmeric, bay leaf and pimento. An expansive, woven palate conveys this vinous deliciousness, with a positive tension assisted by seamless Cabernet tannins, that are at once granular, sleek. Structure and flavours are both sophisticated and complex… masterfully conjured and showcased via this noble variety, Cabernet Sauvignon.
Home to the oldest vines in the country, and no less than 18 wine growing regions, South Australia accounts for almost 50% of Australia’s wine production. The Barossa Valley, McLaren Vale, Langhorne Creek and Coonawarra are well known for their world class reds, with Adelaide Hills, Clare Valley and Eden Valley praised for their exceptional Chardonnay and Riesling.
In McLaren Vale, a wet spring with cooler temperatures and hail impacted flowering and fruit set, reducing yields. The cool harvest conditions contributed to high-quality grapes, with small bunches and berries allowing for concentrated flavours and ripe tannins. Padthaway experienced a wet start to the season, with above-average rainfall in several months. Despite a mid-level heatwave in December, the overall cooler and wetter growing season led to later flowering, fruit set, and veraison. The region avoided significant heat spikes during an orderly harvest, yielding exceptional parcels of Cabernet Sauvignon. The Barossa Valley faced a challenging vintage with near-average winter rainfall and a drier start to spring. The persistent threat of disease required careful vineyard management. Nevertheless, the region enjoyed a moderately warm harvest with beneficial diurnal temperature swings, leading to better-than-expected yields and high-quality fruit, particularly for Cabernet Sauvignon, which exhibited distinctive varietal characteristics.
Key to the success of Penfolds has been a lineage of visionary winemakers. There have only ever been four Chief Winemakers at the helm of Penfolds – Max Schubert, Don Ditter, John Duval and Peter Gago, each a custodian of a rich winemaking tradition that goes back for more than 170 years.
