Overview

Penfolds Max’s Cabernet Sauvignon is a tribute to former Chief Winemaker Max Schubert 1948-1975, a legend in Penfolds history. Max’s constant pursuit of excellence paved the way for those who followed in his footsteps and also allowed the status and heritage of Penfolds to grow. Max’s Cabernet Sauvignon displays the Penfolds ‘stamp’ inspired by Max Schubert.

Taste Description

Taste Description

Nose

A quick swirl and varietal cues leap from the glass. Classic cabernet notes of crushed mulberry leaf and lignified bay leaf. Dusty cocoa powder and woody spices of cassia and star anise. Blackberry and bramble fruits sit comfortably at the riper end of the varietal spectrum. Very enticing.

Flavours and Palate

On the palate a classically varietal rhubarb vibrancy is immediately apparent, supported by a dark fruit flavour profile. Earthy notes balance the sweeter fruits with hints of freshly grated beetroot, fresh mint, summer pudding and whipped cream. Oak derived nuances of cashews and walnuts provide texture, well supported by fine lacy tannins.

Map of South Australia

South Australia

Home to the oldest vines in the country, and no less than 18 wine growing regions, South Australia accounts for almost 50% of Australia’s wine production. The Barossa Valley, McLaren Vale, Langhorne Creek and Coonawarra are well known for their world class reds, with Adelaide Hills, Clare Valley and Eden Valley praised for their exceptional Chardonnay and Riesling.

Vintage Conditions

The South Australian vintage will be remembered for producing a small harvest of very high-quality grapes. The growing season was challenging with cool conditions for budburst, very windy conditions for flowering and early summer bushfires in the Adelaide Hills. However, the remainder of the summer and following autumn were very dry with optimal conditions for grapes to ripen. While yields were down the overall quality of the harvest was exceptional.

Winemaker team portrait

The Penfolds Team

Key to the success of Penfolds has been a lineage of visionary winemakers. There have only ever been four Chief Winemakers at the helm of Penfolds – Max Schubert, Don Ditter, John Duval and Peter Gago, each a custodian of a rich winemaking tradition that goes back for more than 170 years.

Our current Penfolds winemaking team has more than 100 years between them as Penfolds winemakers. They are constantly refining and improving their work, whilst honouring the winemaking techniques of their predecessors.
