Penfolds Max’s Cabernet Sauvignon is a tribute to former Chief Winemaker Max Schubert 1948-1975, a legend in Penfolds history. Max’s constant pursuit of excellence paved the way for those who followed in his footsteps and also allowed the status and heritage of Penfolds to grow. Max’s Cabernet Sauvignon displays the Penfolds ‘stamp’ inspired by Max Schubert.

Varietal aromatics shine bright. First noted, red currants and fresh cranberries. A gentle swirl reveals dried Italian herbs with a suggestion of charcuterie meats.
Cabernet line and length, impeccably balanced. Red, blue and black fruits meld with sweet-spiced cinnamon. Vanilla Chai and cedar oak add further exotic allure. Fine, silky tannins add savoury balance and length to the palate. Refreshing acidity provides a lovely counterweight to the generous fruits.
Home to the oldest vines in the country, and no less than 18 wine growing regions, South Australia accounts for almost 50% of Australia’s wine production. The Barossa Valley, McLaren Vale, Langhorne Creek and Coonawarra are well known for their world class reds, with Adelaide Hills, Clare Valley and Eden Valley praised for their exceptional Chardonnay and Riesling.
South Australia's spring was cooler than average with some isolated frost and intermittent thunderstorms. Conditions gradually warmed by late November. The weather for flowering and fruit-set was ideal. A dry yet cool December extended fruit-set but also fostered sugar accumulation and phenolic maturity due to healthy canopies. Overall, summer was cooler than average, which led to an unhurried harvest. Cabernet Sauvignon grapes were picked in in an orderly fashion in peak condition.
Key to the success of Penfolds has been a lineage of visionary winemakers. There have only ever been four Chief Winemakers at the helm of Penfolds – Max Schubert, Don Ditter, John Duval and Peter Gago, each a custodian of a rich winemaking tradition that goes back for more than 170 years.
Our current Penfolds winemaking team has more than 100 years between them as Penfolds winemakers. They are constantly refining and improving their work, whilst honouring the winemaking techniques of their predecessors.
